The winemaking process involves hand-selected healthy organic grapes, gentle handling, no pressing, spontaneous fermentation, amphora fermentation and aging, no temperature control, no racking, fining, or filtering, no additives, and no sulphites added.

APPLE CIDERS

Our aim is to delve into the potential of mashing, macerating, and fermenting organic, wholesome, and mature apples in amphoras. The process results in a rejuvenating and 'glu-glu' natural cider, where the juice is bottled prior to the completion of primary fermentation. Furthermore, this cider is bottled along with fine lees, without the addition of sulphites
