Vinification process: After milling, the Goldrush and Crimson Crisp apples underwent an 8-hour skin maceration before being gently pressed. The juice fermented spontaneously in 750-liter Tava amphoras, developing its depth and structure naturally.
The primary fermentation for Goldrush and Crimson Crisp apples reached full completion in amphora. Before bottling, a tiny amount of Dominic apple juice was added to increase natural spritz. This initiated a secondary fermentation in the bottle, producing fine, soft, naturally formed bubbles.
