A vibrant, structured, and orchard-driven sparkling drink blending mostly Goldrush, Crimson Crisp and quince. Fermented in amphora, finished with fresh must, and crafted with nothing but fruit, gravity, and time.

Vinification process: After milling, the Goldrush, Crimson Crisp, and quince macerated on the skins for 18 hours before pressing. The primary fermentation completed naturally inside 750-liter Tava amphoras.
Before bottling (19 October 2024), fresh Granny Smith apple juice was added as the tirage. This initiated a gentle secondary fermentation inside the bottle, creating elegant, natural bubbles.
Made without the addition of: Yeast, concentrate, sugar, flavourings, carbon dioxide, or sulphites.
