Fermentation finished in the bottle resulting in gentle bubbles
Vinification process: After milling, the Goldrush apples were macerated on the skins for 18 hours before being pressed.
The juice fermented spontaneously in amphoras until the primary fermentation was complete.
Before bottling, 8% organic sour cherry juice was added.
The secondary fermentation took place inside the bottle, creating fine natural bubbles.
Made without the addition of: Yeast, concentrate, sugar, flavourings, carbon dioxide, or sulphites.
