Vinification process: After milling, the Goldrush and Crimson Crisp apples were macerated on the skins for 18 hours before being pressed
The juice fermented spontaneously in amphoras until the primary fermentation was complete.
Before bottling, 10% organic sour cherry juice was added.
The secondary fermentation took place inside the bottle, creating fine natural bubbles.
Made without the addition of: Yeast, concentrate, sugar, flavourings, carbon dioxide, or sulphites.
