A carefully crafted, naturally sparkling cider from Hungary, made with a thoughtful blend of 42.5% Goldrush, 42.5% Crimson Crisp, and 5% Dominic apples, all grown organically. The apples were milled and macerated for 8 hours before gentle pressing, preserving the purity and character of the fruit.
Fermentation occurred spontaneously in a 750-liter tava amphora, with no added sulphites, no sugar, no fining, and no filtration. The primary fermentation for the Goldrush and Crimson Crisp varieties was nearly complete before bottling. To enhance natural effervescence, a small amount of Dominic apple juice was added, allowing secondary fermentation to occur in the bottle, creating beautiful, natural bubbles.
