  • We started with a thoughtful blend of apples. These were milled and then macerated for 8 hours before we pressed the pomace. The juice underwent spontaneous fermentation in a 750-liter tava amphora.

    The primary fermentation process was almost completed using the Organic apples (Sirius). Before bottling, to increase the fizzyness we added a tiny amount of juice from the variety. This led to a secondary fermentation inside the bottle.
